Soy free meat analogs

I like soy. I pretty much have to with my chosen diet, but unless you have an allergy I don't see the harm (OHAI WESTON PRICE FOUNDASHUN, fuck you thank you for ur input). If you want to get away from soy in your fake meat analogs you pretty much have to make it yourself. Which isn't so bad as they're usually cheaper than store bought and easy to make.

Chickpea Cutlets from Veganomicon

Black Bean Burgers (I use a little vital wheat gluten to stick everything together)

Seitan O'Greatness. I put slices of this on my veggie Subway subs, as their "Gardenburger" has cheese, milk, and eggs in it. >.< I don't remember pulling any of the 3 out of my backyard plot, maybe they have special soil or something. This is the recipe that made [livejournal.com profile] annlarimer spit it out in the trash can, so...

Pinto Bean Sausages

I love to put spicy tempeh sausage crumbles on pizza, but that's soy. Still. Is yummers.

All of the above recipes, I leave out the salt and put at least 3-4x the spices in. Vali and I love hot, spicy food. If you're not crying while you're eating it what's the point? Cut me open and I bleed chipotle powder.

I need to try those chickpea cutlets sometime. I love chickpeas.

I'm not vegetarian though I try to eat only 1 meat or fish-based meal a day (and sometimes only a few times a week). I like tofu in general and just haven't experimented enough with other "substitutes".

Chickpea cutlets are awesome. Cheap and quick to make. I throw the chickpeas into the blender to cut the prep time to a fraction, and sometimes I toss in a little nutritional yeast to give the cutlets a cheesy texture.

I like to think that I merely set the seitan free.

These look fabulous. Thank you for sharing! All I've ever had in my veggie subway subs have been the vegetables (and cheese), but seitan! Yay!

I've been told to avoid soy because of the hormones and the possibility they would cause cancer to develop, but I am not sure if this is true (or any more true than all the other foods that can cause cancer if overdone, at least). Do you know anything about this?

I think with soy what you have to be careful of is if you have a family history of cancers that are contributed to by estrogen. So types of breast cancer and ovarian, I think?

Ohhh. Well, that ends up right in my backyard. :/ Thank you, though!

You should definitely check with your doctor to see what they say, but in the meantime here's how Medlineplus.gov breaks down the info: http://www.nlm.nih.gov/medlineplus/druginfo/natural/patient-soy.html

Thanks for the link!

Ooh, yum. Okay if I link to this? I think [livejournal.com profile] stoplookingup would be interested.

Please do!

Oh, nice. Very helpful, thanks for these!

As far as the soy thing goes, I try not to eat to much of it because my family has a history of thyroid disease. And yeah, I know the evidence isn't conclusive on that, but it helped my mom A LOT when she cut the soy out of her diet. Not that she was cured or anything, but she's much better than she was a few years ago. So I figure better safe than sorry. It does make my meal planning a bit more complicated though.

I'm glad your mom is feeling better! I agree that you should eat what makes you feel better, but I don't envy you-- soy lecithin is in everything. eek.

Thanks. :) It's a huge pain. Sometimes I just go "eh, there's not much soy in this," but I try not to do that very often. Ah well, I suppose it could be worse- at least there are more options out there than there used to be anyway. Thank goodness for the internets!
