Case in point: I made Sprouted Bread yesterday. Actually, I started to soak the wheat berries and mung beans on Saturday, rinsed and washed for three days, then had the time to knead and rise and bake the bread last night. It were Teh Awesome Sauce.
One thing? I didn't add any water and had to add an extra 1/2 cup of vital wheat gluten and a 1/2 cup of whole wheat flour just to make the darn thing hold together, otherwise I would've had Whole Wheat Soup.
It was delicious. And now I have a new bread recipe! I can make it with chickpeas, wheat berries, rye berries, lentils (a new way of getting rid of the zillion pounds of brown lentils omgyay), and all sprouts that are good. And ingredients-wise, it's not very expensive at all, even less so if you leave out the flax seeds, pepitas, and sunflower seeds, but who in their right mind wants to do that?
